Job Requirements

  • High school graduate or General Educational Development (GED) equivalency
  • pass a thorough background investigation
  • no felony convictions
  • must be of good moral character and must not have been convicted of a crime punishable by imprisonment in a Federal penitentiary or State prison

  • knowledge of methods, procedures, materials and equipment involved in large scale food preparation and storage
  • use and care of kitchen utensils and equipment
  • principles and practices of sanitation, personal hygiene and safety in food preparation and service
  • basic math skills
  • ability to follow simple verbal and written instructions
  • ability to read and understand therapeutic diet guidelines, production work sheets and recipes
  • physical ability to lift, carry, push up to 50 pounds
  • maintain professional attitude in secure settings
  • ability to learn large scale food preparation and special diets
  • ability to use kitchen equipment efficiently
  • ability to work with cleaning supplies
  • ability to prepare and serve large quantities of food attractively and appetizingly
  • ability to perform physically demanding tasks including lifting, bending, stooping, standing and reaching overhead
  • ability to use a pallet jack
  • ability to measure and record food amounts properly

Job Duties

  • Clean and prepare vegetables and fruits
  • operate kitchen equipment including microwave, coffee machines, blender, mixers, and meat slicer
  • prepare sandwiches, coffee, custards, and gelatins
  • serve food in a cafeteria setting
  • prepare meals in accordance with the therapeutic diet manual
  • perform a variety of cleaning and custodial work such as washing dishes, pots, pans, and kitchen utensils
  • load, unload, operate and clean dishwasher, mop floors, clean and sanitize kitchen surfaces and refrigerator walls and floors, and dispose of garbage
  • store, rotate, and distribute food and supplies
  • prepare and serve between meal nourishment
  • transport food to appropriate destinations, which may require loading and unloading
