- High school graduate or General Educational Development (GED) equivalency
- pass a thorough background investigation
- no felony convictions
- must be of good moral character and must not have been convicted of a crime punishable by imprisonment in a Federal penitentiary or State prison

- knowledge of methods, procedures, materials and equipment involved in large scale food preparation and storage
- use and care of kitchen utensils and equipment
- principles and practices of sanitation, personal hygiene and safety in food preparation and service
- basic math skills
- ability to follow simple verbal and written instructions
- ability to read and understand therapeutic diet guidelines, production work sheets and recipes
- physical ability to lift, carry, push up to 50 pounds
- maintain professional attitude in secure settings
- ability to learn large scale food preparation and special diets
- ability to use kitchen equipment efficiently
- ability to work with cleaning supplies
- ability to prepare and serve large quantities of food attractively and appetizingly
- ability to perform physically demanding tasks including lifting, bending, stooping, standing and reaching overhead
- ability to use a pallet jack
- ability to measure and record food amounts properly
Job Duties
- Clean and prepare vegetables and fruits
- operate kitchen equipment including microwave, coffee machines, blender, mixers, and meat slicer
- prepare sandwiches, coffee, custards, and gelatins
- serve food in a cafeteria setting
- prepare meals in accordance with the therapeutic diet manual
- perform a variety of cleaning and custodial work such as washing dishes, pots, pans, and kitchen utensils
- load, unload, operate and clean dishwasher, mop floors, clean and sanitize kitchen surfaces and refrigerator walls and floors, and dispose of garbage
- store, rotate, and distribute food and supplies
- prepare and serve between meal nourishment
- transport food to appropriate destinations, which may require loading and unloading
