Job Requirements
- Minimum of 3 years’ relevant experience on a luxury cruise ship, private country club or similar, luxury hotel or resort
- BA/BS 2-3-year Culinary Degree (or foreign equivalency) preferred
- Certification in sanitation and public health
- Knowledge of cold food production including handling and preparation of salads, dressings, sandwiches, and hors d’oeuvres and understanding of composition, structure, and quality factors of meats, game, poultry, fish, and shellfish
- Ability to work in production or line capacities or a combination of both
- Working knowledge of inventory management systems and Fidelio
- Experience working in a multi-cultural environment
- Good computer skills to include Word, Excel and Outlook
- Able to read, write and speak fluently in English
- One additional language is preferred

Job Duties
- Communicate with the Sous Chef regarding culinary matters
- Report work orders to the Chef de Cuisine/Sous Chef
- Assist with the development and maintenance of appropriate par stocks for food products and equipment based on current needs and upcoming functions
- Assist Chef de Cuisine/Sous Chef by completing and delivering all reports, documents, and other items requested by supervisor
- Ensure all food is prepared fresh and is of the highest quality
- Adhere to all recipes and cooking methods
- Rotate between different stations as requested
- Responsible for mise-en-place and food service for production area
- Work to decrease the stock of slow moving items
- Taste all food to ensure correct preparation
- Assist in achieving the budgets by minimizing waste and breakage and maintaining proper handling procedures
- Review all food related costs and consumptions in accordance with financial targets
- Ensure that all areas are maintained in accordance with Company policy, Public Health (HACCP), SMS, safety and environmental regulations
