Job Duties
- Development of menu items and recipes
- responsible for standardization of all recipes
- oversee daily preparation of menu items and assure quality control by supervising and instructing kitchen staff to adhere to standardized recipes
- supervise mixing of all dough including raised donuts, cake donuts and kolaches
- adjust batches to kitchen climate to ensure product consistency
- supervise rolling, cutting, proofing, frying and baking of full product line
- manage completion of full production line according to production charts
- communicate with management regarding par levels and supply needs
- oversee finishing of all donuts including glazing, icing, filling, sugaring and decorating
- assist in kitchen cleanliness, organization and safety
- maintain high food safety standards and proper handling and storage of food and equipment
- provide approval on all products prior to display
- use various kitchen tools and equipment
- ensure compliance with health department regulations
- practice food handling and cleaning as outlined in employee handbook
