Job Requirements
- High school diploma or equivalent
- Previous experience in a culinary or food preparation role preferred
- Ability to follow safety and sanitation standards
- Strong attention to detail and commitment to quality
- Ability to work flexible hours including weekends and holidays
- Ability to stand for extended periods
- Effective communication skills
- Physical ability to perform kitchen tasks such as lifting and bending
- Must be legally eligible to work in the United States
Job Qualifications
- Ability to verbally communicate effectively with guests and co-workers
- Ability to push, pull, bend, stoop and reach upward
- Ability to read Banquet Event Orders (BEO)
- Experience cooking on carving station, pasta, omelet and stir fry stations
- Ability to work all banquet functions
- Ability to cut, trim and bone meat prior to cooking
- Ability to wash, peel, cut and shred fruits and vegetables for preparation
- Ability to maintain positive relationships with other departments
- Ability to bake, broil, saute and steam various foods
- Ability to measure and mix ingredients according to recipes
- Must be able to speak and understand basic English
Job Duties
- Prepare food of consistent quality following Fairmont Grand Del Mar and Forbes standards
- Date all food containers and rotate per Standard Operating Procedures (SOP)
- Practice safety standards at all times
- Cook orders as requested including special requests
- Start food items prepared ahead while avoiding overproduction
- Practice sanitation standards ensuring proper temperatures for perishables
- Properly portion all items on assigned station
- Control food waste, loss and usage per SOP and assist in correcting food cost problems
- Check pars for shift use, determine necessary preparation, freezer pull and line set up
- Note out-of-stock items or shortages and assist in buffet stocking
- Assist in prep work of vegetables and condiments for the next shift
- Return unused food items properly covered and dated to storage
- Respond to all reasonable management requests within capabilities
