Job Requirements

  • High school education preferred
  • Apprenticeship, post secondary school, or equivalent work experience beneficial
  • Managerial and production experience required in similar hotel or resort
  • 3-5 years in management of high volume production of hot and cold food, associate dining, upscale restaurants, and multiple outlet operations
  • Additional language skills helpful
  • Basic computer knowledge helpful
  • Ability to read, write, and speak English
  • Finger/hand dexterity
  • Ability to grasp, lift, and/or carry goods up to 200 lbs. on a continuous schedule
  • Knowledge of food and labor cost controls

Job Duties

  • Train, supervise, and work with all chefs' staff to prepare, cook, create, and present food according to hotel standard recipes
  • Assist in control of food, labor, and departmental expenses
  • Assign specific duties to kitchen associates for efficient operation
  • Select, train, and supervise kitchen staff in menu item preparation
  • Schedule culinary staff to maintain coverage and control payroll costs
  • Ensure proper ordering, receiving, storage, usage, and rotation of food products following Health Department regulations
  • Adhere to cost and quality control procedures
  • Supervise daily safety and sanitation practices
  • Maintain vacation schedules for proper staffing
  • Assist engineering with equipment repairs and preventative maintenance
  • Develop and execute special events, VIP parties, and staff events
  • Prepare food items according to recipe specifications
  • Perform other duties as assigned
