Job Requirements

  • Must be able to stand for up to eight hours on hard surfaces
  • Ability to lift and pull up to fifty pounds
  • Must be able to bend, stoop and walk regularly
  • Must work nights, weekends, and/or overtime as required
  • Requires wearing closed-toe, non-canvas, and non-skid soled shoes
  • Must follow safety and sanitation policies
  • Must maintain consistent food quality regardless of business volume and staffing
  • Ability to adapt to changes in procedures and staffing
  • Must absorb large amounts of information quickly

Job Qualifications

  • High school diploma or equivalent
  • Minimum one year prior food preparation experience
  • Experience in fine dining or luxury hotel preferred
  • Ability to read, write and perform basic mathematical calculations
  • Knowledge of safe knife and equipment handling
  • Strong communication and teamwork skills
  • Ability to work independently and show initiative

Job Duties

  • Sets up, clears and breaks down work station
  • Follows written and oral instructions regarding menus and standardized recipes
  • Prepares a wide variety of menu items such as roasting, broiling, baking, frying, steaming and stewing meat, fish and poultry
  • Utilizes a variety of kitchen equipment including small and large pieces
  • Cleans working and storage areas, tools, equipment and floors as needed
  • Disassembles and assembles component parts and accessories for cleaning kitchen equipment
  • Identifies hazards and assesses risks associated with foods and reports them
  • Supervises kitchen staff to ensure guest satisfaction
  • Controls waste and maintains food cost
  • Maintains all sanitation requirements including product rotation and temperature maintenance
  • Maintains all policies and procedures as trained for food preparation
  • Responds professionally to all questions and requests
  • Performs additional tasks as assigned by the manager
