Job Requirements

  • Associate's degree in culinary arts from an accredited college or university
  • five years of related occupational experience as a Sous Chef or higher overseeing six or more employees within the last ten years
  • current SERV Safe Certification

  • knowledge of culinary arts procedures
  • skill in developing lesson outlines and materials
  • skill in instructional technologies and adult learning techniques
  • excellent interpersonal, analytical, oral and written communication skills
  • ability to teach a multicultural student population
  • knowledge of nutrition, food safety, HACCP, cost control, and environmental hygiene
  • ability to advise and counsel students
  • experience with student information systems
  • ability to follow approved course syllabus

Job Duties

  • Provide instruction for credited culinary arts core courses
  • ensure outcomes meet stated objectives
  • utilize techniques that facilitate adult learning styles
  • teach savory food preparation and holistic food presentation including fruit/vegetable/starch preparation, garde manger, meat, seafood, and poultry fabrication
  • teach stock, soup and sauce preparation, international cuisine, regional American cuisine, and advanced baking and pastry preparation including artisan breads, pastry components, wedding cakes, and chocolates
  • integrate nutrition, food safety, and cost control into instruction
  • apply knowledge of HACCP and environmental hygiene
  • follow approved course syllabus
  • monitor students’ use of supplies, materials, and equipment
  • advise and counsel students
  • maintain advisement records
  • attend meetings as required
  • enforce institution’s policies and regulations
  • assist with student recruitment and job placements
  • serve on committees
  • perform additional duties as assigned
