Wild Blossom Meadery

Wild Blossom Meadery & Winery, established in 2001, is Chicago's first winery and the only meadery on the Northern Illinois Wine Trail. Located at 9030 S. Hermitage Ave, Chicago, IL 60620, the meadery specializes in crafting a diverse range of meads—fermented honey beverages—that showcase the rich flavors of locally sourced ingredients.

The meadery's founder, Greg Fischer, brings over 30 years of winemaking experience. His passion for beekeeping, which began in his youth, plays a pivotal role in Wild Blossom's operations. Instead of cultivating vineyards, Fischer focuses on raising honeybees, ensuring a sustainable and harmonious relationship between the meadery and the environment.

Wild Blossom's meads are celebrated for their unique and innovative flavors. Signature creations include the award-winning Chocolate Cherry Honey Buzz and PB&J mead, fermented over fresh-roasted peanuts and co-fermented with Concord grapes. This distinctive process results in a flavor profile reminiscent of a peanut butter and jelly sandwich.

Visitors to the meadery can enjoy guided tours that delve into the art of mead-making, the significance of bees in the ecosystem, and the history of this ancient beverage. The tasting room offers flights of various meads, allowing guests to experience the full spectrum of flavors produced on-site.
