Von Ebert Brewing is a Portland-based brewery founded in 2018 by father-son duo Tom M. Cook and Tom S. Cook. The brewery's name honors their family matriarch, affectionately known as "Grandma Ebert," who emigrated from Germany via Ellis Island and built a successful life in the United States.

The name "Von Ebert" translates to "House of Ebert" or "House of the Boar," reflecting the family's heritage and the brewery's commitment to quality and tradition.

Von Ebert Brewing offers a diverse range of award-winning beers, including their flagship Pilsner, "Pils," and the "Volatile Substance IPA." In 2025, they expanded their offerings to include six core year-round beers:

  • Volatile Substance NW IPA
  • Sector 7 Hazy IPA
  • Pils
  • Clubhaus American Light Lager
  • Drink Me Potion Raspberry Tart Ale
  • Waning Echoes American Stout

These beers are available in 12-ounce six-packs at various Northwest bars, bottle shops, and grocery stores.

In addition to their core lineup, Von Ebert Brewing collaborates with other breweries to create unique and innovative beers. They partnered with Firestone Walker Brewing Company to release special anniversary beers, such as the "6th Anniversary West Coast IPA" and "6th Anniversary German-style Pilsner."
