The name "Tre Dita," meaning "three fingers" in Italian, pays homage to the traditional thickness of a properly cut bistecca alla Fiorentina, the restaurant's signature dish.

At the heart of Tre Dita is Chef Evan Funke's renowned "pasta laboratorio," a temperature- and humidity-controlled space where chefs meticulously handcraft traditional Tuscan pastas daily.
