Founded in 1995 as Zuma Fresh Mexican Grill in Denver, Colorado, by Anthony Miller and Robert Hauser, the company has grown significantly. Its diverse menu includes burritos, tacos, quesadillas, nachos, and salads.

In 2018, Qdoba was acquired by a consortium led by Apollo Global Management. In October 2022, it was acquired by Butterfly Equity.

The company plans to open more than 50 restaurants in 2024 across the U.S., Canada, and Puerto Rico.

Qdoba’s menu features a variety of customizable options allowing customers to build their own burritos, bowls, tacos, quesadillas, nachos, and salads. Premium toppings such as signature 3-cheese queso and hand-crafted guacamole are included at no extra charge.

As of July 2024, Qdoba operates 757 restaurants across 45 states and territories in the U.S., with Colorado having the highest number at 83.

It aims to nearly double its number of locations to a projected 1,600 over the next decade, focusing on growth and expansion.
