About Edible Beats

Edible Beats is a Denver-based, 100% employee-owned restaurant group founded by Chef Justin Cucci in 2008. The group operates several distinctive dining establishments, including Root Down, Linger, Ophelia's Electric Soapbox, Vital Root, and El Five.

Each restaurant is celebrated for its unique ambiance, innovative design, and commitment to sustainability.

Restaurant Concepts

Root Down is housed in a converted 1950s gas station, offering a mid-century modern dining experience. Linger occupies a former mortuary, providing an eclectic atmosphere that reflects its rich history. Ophelia's Electric Soapbox is situated in a historic brothel, blending vintage charm with contemporary culinary offerings.

Vital Root focuses on plant-based cuisine, emphasizing fresh, locally sourced ingredients. El Five, located on a rooftop, offers Mediterranean-inspired dishes with panoramic city views.

Sustainability Initiatives

A cornerstone of Edible Beats' philosophy is its dedication to sustainability and local sourcing. The group sources over 50% of its ingredients from local farms and ranches within Colorado, ensuring freshness and supporting the local economy.

In May 2023, Edible Beats installed a hydroponic container farm called BeatBox Farms at Vital Root. This 320-square-foot vertical hydroponic farm produces the equivalent of up to 2.5 acres of traditional farmland annually, growing a variety of herbs and leafy greens.

The initiative aims to reduce packaging waste, lower the carbon footprint, and provide fresh produce directly to their restaurants.

Employee Ownership

In February 2022, Edible Beats implemented an Employee Stock Ownership Plan (ESOP), granting all eligible employees a stake in the company's long-term financial success. This move reflects the group's commitment to fostering a sustainable and inclusive workplace culture.

Community Engagement and Innovation

Edible Beats' dedication to innovation and community engagement is exemplified by the launch of "The Edible Beat," a hybrid magazine-cookbook. This publication features recipes from their restaurants, stories, and insights into the group's culinary philosophy.
