About Echo & Rig
Echo & Rig is a modern steakhouse and butcher shop founded by Chef Sam Marvin, offering a unique dining experience that combines high-quality meats with a vibrant atmosphere. The restaurant operates in Las Vegas, Nevada.
Guests can enjoy a diverse menu featuring a variety of steaks, butcher cuts, and small plates. Echo & Rig emphasizes a "nose-to-tail" approach, providing meats from different farms and ranches, including New York strip, ribeye cap, and zabuton.
Signature dishes include portobello fries, steak tartare, and the drunken goat sandwich, which features red wine-marinated goat cheese, brie, cranberry chutney, herbs de Provence, green apple, petite greens, aioli, and walnut bread.
The butcher shop is an integral part of the dining experience, showcasing a glass meat locker, dry-aging cases, and an exhibition-demonstration area. This setup allows guests to select preferred cuts and observe the butchering process, enhancing the culinary experience.
Community Involvement
Echo & Rig participates in community events and initiatives. For example, during the 18th Annual Las Vegas Restaurant Week, the restaurant offered a $30 prix fixe lunch menu, with a portion of proceeds benefiting Three Square Food Bank.
