About Cowboy Ciao
Cowboy Ciao was a renowned restaurant blending flavors of the American Southwest, Italy, and Mexico to create a unique dining experience. Established in 1997 in Scottsdale, Arizona, it quickly became a staple in the local culinary scene.
The restaurant was celebrated for its eclectic menu and extensive wine list, featuring selections from over a dozen states and 45 countries, encompassing 250 varieties.
Signature Dishes
One standout dish was the Stetson Chopped Salad, a vibrant mix of smoked salmon, couscous, arugula, black currants, pumpkin seeds, sweet corn, diced tomatoes, and Asiago cheese, tossed with a pesto buttermilk dressing.
This salad became iconic and was even featured at sister establishments like Citizen Public House and The Gladly after Cowboy Ciao’s closure.
Another popular menu item was the Exotic Mushroom Pan Fry, which remained a favorite until the restaurant’s closure.
Closure and Legacy
After over two decades, Cowboy Ciao closed its doors in 2018. The Old Town Scottsdale location was later transformed into the Polynesian-themed tiki bar and restaurant, Drunk Munk, which opened in March 2019.
Though the original Cowboy Ciao locations have closed, the legacy of its signature dishes continues to be enjoyed at other local establishments. Its culinary influence endures in the Scottsdale dining scene.
