The role of the Restaurant Sous Chef at Bergdorf Goodman is essential to maintaining the establishment's reputation for outstanding quality and service. This position promotes the excellence of the Neiman Marcus store by building and leading a professional culinary team dedicated to creating top-tier food experiences. The Sous Chef will manage catering and special parties while overseeing key restaurant initiatives that ensure operational success and guest satisfaction. Responsibilities include monitoring daily food inventories to reduce waste and maintain proper food costs, maintaining health and sanitation standards as required by Neiman Marcus, local and federal health departments, and third-party auditors. The Sous Chef is also responsible for overseeing cleanliness and maintenance of dining rooms and kitchens, driving the restaurant to achieve high health and safety scores, and maintaining an up-to-date recipe book.
Working closely with the front of house staff, the Sous Chef will execute orders, manage special menus, and monitor the preparation and delivery of dishes to ensure quality and timeliness. The role requires managing inventory, processing batch invoices, supporting special events and promotions, and collaborating on catering needs. This position requires strong leadership through coaching, counseling, providing feedback, and resolving conflicts among team members. Effective communication with the restaurant management team, culinary staff, and other departments is crucial to maintaining smooth operations.
Ideal candidates will bring 4 to 6 years of relevant experience, preferably with a 4-year degree, and possess a proven track record of achieving business results by motivating and leading teams. They should have strong financial acumen, excellent communication and interpersonal skills, a detail-oriented approach, and a deep understanding of order of service and proper table settings. Proficiency in MS Office products, physical stamina for standing and lifting, and the ability to work a flexible schedule are also required.
