Job Requirements

  • High school degree or GED required
  • Associate's degree or equivalent preferred
  • Three to five years experience in a supervisory capacity
  • ACF certification or equivalent required
  • Certified Professional Food Manager Certification required
  • Health permit, food safety and alcohol awareness cards required prior to employment
  • Good written and verbal communication skills
  • Ability to handle multiple tasks in fast-paced environment with minimal supervision
  • Experience in high volume environment required
  • Ability to supervise multiple culinary staff
  • Good judgment and decision making
  • Ability to interact professionally with other departments and external contacts
  • Occasional travel for training
  • Physical ability to perform demanding tasks including standing, walking, lifting over 35 pounds, climbing stairs and ladders
  • Ability to communicate clearly in English
  • Ability to hear and have specific vision capabilities

Job Duties

  • Perform all responsibilities of each position in the kitchen
  • Conduct proper ordering procedures to maintain appropriate par levels of kitchen products
  • Ensure high standard of service efficiency, sanitation, training, and safety practices
  • Perform daily inventory walk-through to determine production needs
  • Conduct regular staff meetings
  • Assist Kitchen Manager with labor control and assigning duties
  • Develop, coach, discipline, and mentor staff members
  • Ensure accurate culinary staff schedules
  • Anticipate and recommend employment needs
  • Coordinate catering/banquet functions with department heads
  • Ensure proper plate presentation and adherence to recipe guidelines
  • Maintain quality and consistency of products
  • Train new staff members
  • Notify department heads of low inventory and recommend new purchases
  • Ensure highest quality products meet guest specifications
  • Maintain productivity and quality standards
  • Calculate food cost of goods sold and troubleshoot cost discrepancies
  • Forecast labor cost using historical data
  • Communicate company products and happenings to guests
  • Perform duties with urgency
  • Utilize safety and sanitation practices
  • Adhere to company policies and procedures
