The role of the Sous Chef at Sonesta Hotels is a vital position within the Food & Beverage department, responsible for maintaining high standards in the preparation and presentation of all meals served to guests. The Sous Chef oversees kitchen operations, ensuring that every dish meets rigorous quality criteria for taste, consistency, visual appeal, and portion control, while also managing food costs effectively. This position demands a culinary leader who can train and mentor culinary staff, uphold corporate quality standards, and implement food safety and sanitation procedures in compliance with local health regulations.

Working closely with the Director of Food & Beverage, the Sous Chef assists in menu development, daily kitchen management, and coordination among various kitchen stations including the main kitchen, bakery, and pantry. The role includes critical responsibilities such as monitoring inventory and food purchasing to ensure proper ordering and cost efficiency, preparing reports related to wages, payroll, revenue, and food production, and responding promptly to guest feedback and complaints. Effective collaboration with fellow Food & Beverage managers is also essential to ensure seamless service delivery and address operational challenges as they arise.

This position operates primarily in a service environment that includes both kitchen and administrative duties. Physical demands include occasional lifting of heavy objects and tolerating extreme temperatures commonly found in kitchen and storage areas. The ideal candidate will demonstrate excellent problem-solving skills, strong communication abilities, and the capacity to manage multiple priorities in a fast-paced hospitality setting.

The hourly pay range for the Sous Chef position at Sonesta Hotels is approximately $36.06 to $38.46, depending on experience and qualifications. Job Qualifications

Job Duties

  • Collaborate with other Food & Beverage managers, keeping them informed of issues as they arise
  • keep the immediate supervisor fully informed of all problems or matters requiring their attention
  • coordinate and monitor all phases of loss prevention in kitchen areas
  • prepare and submit required reports in a timely manner
  • monitor the quality of all food products and their presentation
  • ensure preparation of necessary reports, including wage progress, payroll, revenue, employee schedules, and quarterly action plans
  • oversee all aspects of daily kitchen operations and food production areas, including hot food from the main kitchen and bakery, and cold food from the pantry
  • inform cooks of daily forecasts and customer counts for timely preparation and service of both hot and cold food
  • respond to guest complaints promptly
  • ensure compliance with Standard Operating Procedures in all outlets
  • ensure compliance with requisition procedures
  • conduct staff performance reviews in accordance with Sonesta Hotel Policies and Standards
  • understand, implement, and monitor corporate promotions in outlets, including buffet and three-meal concept standards
  • know and enforce all local health department sanitation laws
  • understand how to compute daily food costs
  • work with the Director of Food & Beverage to create and implement menus
  • assess food portion size, visual appeal, taste, and temperature of served items
  • check all stations at the end of every shift for proper food storage and sanitation
  • verify food purchases for correct ordering, quality, and price structure
  • oversee daily activities such as preparing all food items, sanitizing outlets, receiving daily inventories, logging reports, and preparing food cost reports
  • prepare daily food production sheets
  • cut meat, poultry, and seafood according to daily business needs
