Job Requirements
- Ability to obtain a Class III B+ gaming license
- training in sanitation laws and procedures required
- Culinary Arts Degree required or equivalent experience
- minimum 5 to 7 years experience as Sous Chef or Restaurant Chef
- minimum 1 to 2 years kitchen management experience
- experience supervising a staff of 100 or more
- valid WA State Health Card/Food Handler permit
- valid Serve Safe Certificate

- minimum 5 to 7 years as Sous Chef or Restaurant Chef overseeing multiple outlets
- minimum 1 to 2 years kitchen management experience
- previous experience supervising 100 or more employees
- valid WA State Health Card/Food Handler permit
- valid Serve Safe Certificate
- training in sanitation laws and procedures
- knowledge of kitchen procedures, operations, and State Board of Health regulations
- skilled in culinary techniques
- ability to create menus and perform cost analysis
- proficient in reading, writing, and speaking English
- skilled in communication
- ability to multitask and maintain confidentiality
Job Duties
- Be the face of MCR for new hires and team members
- exemplify MCR's values and demonstrate excellent guest service and professionalism
- practice, support and promote the mission, vision, and values of Muckleshoot Casino Resort
- assume overall responsibility for efficient operation of the individual kitchen
- schedule and train kitchen staff
- plan daily specials for lunch and dinner
- provide input to Executive Chef on procedures and operations
- check portions and quality to meet standards
- establish and maintain security of products, supplies, and equipment
- provide daily/weekly prep and cleaning list for staff
- oversee cleanliness and organization of walk-ins and kitchen storage areas
- ensure food items are prepared fresh daily
- maintain a clean, sanitary kitchen, dish room, and storeroom
- maintain kitchen employee files including performance appraisals and disciplines
- control energy cost in the kitchen
- order necessary product, equipment, and small wares
- train sous chefs and cooking personnel in food preparation
- know all food stations and be able to work all positions
- assist with internal controls
- ensure timely food service
- correct hazardous areas
- communicate with front of house management
- control food cost through purchasing, storage, recipe standardization, and waste control
- manage kitchen employee payroll/timecards
- conduct interviews and select candidates
- understand menu items and presentation
- perform supervisory functions as requested
- mentor and train Muckleshoot Tribal Member Kitchen employees
- create and maintain a positive work environment
- promote team member relations
- perform other duties as assigned
