Job Requirements
- Bachelor’s degree in Culinary Arts, Hospitality Management, or a related field preferred
- Minimum of three years of professional kitchen leadership experience in an upscale, high-volume environment
- Demonstrated expertise in live-fire cooking techniques
- Strong leadership capabilities and team development experience
- Ability to manage multiple outlets and coordinate with food and beverage leadership
- Excellent organizational, communication and interpersonal skills
- Ability to maintain high standards of food quality and safety compliance
- Availability to work flexible hours including evenings, weekends and holidays
Job Qualifications
- Minimum of three years experience leading a professional kitchen in an upscale, high-volume restaurant
- Expertise in live-fire cooking techniques
- Strong leadership and team development skills
- Ability to create and implement innovative menus
- Excellent communication and guest interaction abilities
- Knowledge of health, safety, sanitation and alcohol awareness regulations
- Proven financial and budget management experience
Job Duties
- Direct and oversee all culinary operations including production of all hotel meals, food quality and presentation, compliance with safety and sanitation standards, team member productivity and performance, implementation of policies and procedures, cost controls and overall profitability
- Create and implement new menus and individual menu items for outlets based on current food trends and regional tastes in partnership with Director of Food and Beverage
- Interact with guests and clients to monitor and assess satisfaction trends, evaluate and address issues and make improvements accordingly
- Ensure compliance with federal, state, local and company health, safety, sanitation and alcohol awareness standards
- Perform general management duties including systems management, budget and forecasting, report generation, department management and meeting participation and facilitation
- Monitor and develop team member performance including supervision, professional development, scheduling, counseling, evaluations and recognition
- Recruit, interview and train team members
