- 3+ years in a leadership position in a high volume kitchen
- open availability including nights, weekends, and holidays
- knowledge of P&L statements and budgeting for BOH purchases and labor
- ability to identify and develop team talent

- physical stamina to bend, stand, and move throughout shifts
