Job Requirements
- Minimum five years of experience in Food & Beverage operations including culinary preferred
- At least two years of managing personnel experience required
- Four-year degree in related field or equivalent work experience preferred
- Ability to obtain valid Racing License and applicable health certifications
- Strong leadership and team development skills
- Excellent communication skills
- Ability to work flexible hours and handle high-pressure deadlines

Job Duties
- Manage all areas within the Food & Beverage Back of House
- Oversee kitchen stewards, cooks, and lead cooks
- Develop Back of House team members including conducting interviews, hiring, coaching, retention, and termination
- Review staffing levels and delegate authority and duties
- Enforce company policies, procedures, safety, and health regulations
- Improve service execution, ticket times, and production schedules
- Control food costs through purchasing specifications, product storage, portion control, and waste control
- Establish maintenance schedules for kitchen equipment
- Assist in developing annual budgets and business plans
- Coordinate menu planning and pricing
- Collaborate with Marketing for events and promotions
- Maintain relationships with property management and vendors
