Job Requirements

  • High school diploma or equivalent
  • Must be at least 18 years of age
  • At least one year of relevant cooking experience required
  • Prior experience cooking in a cafeteria or large volume production facility preferred
  • Knowledge of safety procedures in a food service environment

Job Duties

  • Accurately and efficiently prepares a variety of food items in accordance with assigned work instructions and menus
  • Refers to daily prep list at the start of each shift for assigned duties and completes opening and closing checklists daily
  • Knows and complies consistently with standard portion sizes, cooking methods, quality standards and kitchen rules, recipes, policies and procedures
  • Handles, stores, labels, and rotates all products properly and in accordance to applicable state laws
  • Follows assigned instruction to properly stock and maintain sufficient levels of food products at line stations to assure smooth serving of food
  • Assemble and mix ingredients, place mixture on trays, rack trays, and transfer racks to the oven for baking
  • Wrap baked goods, print labels, and properly label all finished products
  • Supervise the production of baked goods, manage inventory/stock levels, and ensure all equipment and facility areas are maintained in good working order
  • Supervise and instruct inmates in daily bakery operations
  • Clean and sanitize all work surfaces, tools, equipment, floors, and counters
  • Other duties as assigned
