The Sushi Chef role at JOEY is critical in upholding these high standards of culinary excellence and hospitality. This position is perfect for detail-oriented and passionate culinary professionals who have a love for creating iconic sushi dishes that provide a world-class experience to every guest. The Sushi Chef will be responsible for producing all sushi menu items with consistency and precision, even under the pressure of a fast-paced and demanding environment. This role requires expertise in various culinary techniques including preparation, cutting, rolling, and presentation of sushi, ensuring that each dish meets JOEY’s rigorous recipe standards. Succeeding in this role means being able to operate efficiently in a team-oriented kitchen, coordinating with other stations, maintaining cleanliness and safety standards, and contributing positively to a supportive work culture.
JOEY offers this position on a part-time or full-time basis, with competitive wages ranging from $25.00 to $30.00 per hour, plus eligibility for tips. Job Requirements
- 1-3+ years of culinary experience
- Must have or be able to obtain valid local and/or state Food Handler and California Responsible Beverage Service certifications
- Possess passion for hospitality
- Thrive in a dynamic, fast-paced work environment
- Ability to walk and stand for prolonged periods
- Frequent bending, reaching, and stretching
- Ability to perform repetitive manual tasks
- Ability to lift and carry up to 50 lbs
Job Qualifications
- 1-3+ years of culinary experience
- Valid local and/or state Food Handler and California Responsible Beverage Service certifications or ability to obtain
- Passion for hospitality
- Proven track record of creating world-class hospitality experiences

Job Duties
- Prep all ingredients and food products to fulfill prep lists, par levels, and recipe standards
- Utilize various prep and cooking methods to ensure the quick, precise creation of sushi menu items in accordance with JOEY recipes
- Wash, chop, cut, grill, roast, sauté, fry, etc.
- Coordinate with other stations as needed
- Maintain prep and cooking areas in a clean, sanitary, and safe manner
- Clean, organize, and maintain refrigerators, cooler drawers, ovens, prep and dry storage areas
- Complete assigned side work and closing duties to set your team up for success
- Stock, clean, and organize line stations
- Follow all instructions and guidelines for safe usage of kitchen equipment and cleaning compounds
- Report equipment problems and maintenance issues to leadership immediately
- Follow all food service and handling safety precautions and procedures
