Job Requirements
- Minimum of 2-3 years of experience working as a Sushi Chef in a professional kitchen environment
- apprenticeship or equivalent combination of education or experience
- proficiency in filleting and preparing various types of fish and seafood
- active California Food Handlers Certification
- open availability to work swing shifts, weekends, and holidays
- must be 21 years old
- must be able to obtain and maintain a California gambling establishment employee permit
- must pass drug test, criminal background, and credit check
- must provide evidence of employment eligibility in the U.S.
Job Qualifications
- Minimum of 2-3 years of experience working as a Sushi Chef in a professional kitchen environment and apprenticeship from culinary school
- two-three years working as a Sushi Chef in a fast-paced environment
- extensive knowledge and expertise in filleting and preparing various types of fish and seafood, ensuring the highest quality standards required
- proficiency in creating a wide range of sushi dishes, including rolls, nigiri, and sashimi, with exceptional attention to detail
- strong knife skills and the ability to handle and prepare ingredients with precision and efficiency
- active California Food Handlers Certification and/or Card
- open availability to work swing shift, weekends and holidays
- must be 21 years old
- must be able to obtain and maintain a current California gambling establishment employee permit, badge or license
- must provide evidence of employment eligibility in the U.S.
- must be able to pass a mandatory drug test, criminal background and credit check
Job Duties
- Expertly prepare sushi rolls, nigiri, sashimi, and other sushi dishes according to established recipes and standards
- fillet and portion different types of fish and seafood with precision and consistency
- ensure that all ingredients used in sushi preparation are fresh, properly stored, and meet the highest quality standards
- assist in maintaining adequate stock levels of ingredients, tools, and equipment necessary for sushi preparation
- pay meticulous attention to detail when arranging and presenting sushi dishes to create an aesthetically pleasing dining experience
- adhere to all food safety and sanitation guidelines, maintaining a clean and organized work area
- collaborate effectively with other kitchen staff to ensure smooth operation and timely service during busy periods
