Job Requirements
- High School Diploma or GED
- Minimum of three years of cooking experience in a full-service or institutional kitchen
- ServSafe Food Handler Training Certificate or ANSI-accredited certification within 30 days of hire
- Ability to stand for extended periods
- Capability to lift and/or move up to 50 pounds
- Availability to work day, evening, and weekend shifts
- Compliance with federal, state, and local safety and health regulations
- Ability to work in a moderately noisy kitchen environment
- Capability to perform physical activities including walking, reaching, stooping, kneeling, and crouching
- Must maintain regular and predictable attendance
- Must adhere to all department and hospital policies
Job Qualifications
- High School Diploma or GED
- Minimum of three years of experience cooking in a full-service or institutional kitchen
- ServSafe Food Handler Training Certificate or another ANSI-accredited Food Handler Training Certificate Program required within 30 days of hire and maintain current certification
- Strong communication and leadership skills
- Ability to manage multiple kitchen stations and delegate tasks effectively
- Experience with recipe and menu development preferred
- Knowledge of food safety, sanitation, and storage procedures
- Ability to work collaboratively in a team environment
- Experience in mentoring or training culinary apprentices
Job Duties
- Prepare rotating menu items at the Plate by Plate station and other assigned stations
- Properly garnish all menu items served at the Plate by Plate station
- Assist the Executive Chef and Sous Chef in developing recipes for rotating menus
- Collaborate with the Purchasing Manager to procure new food items for menu development
- Participate in creating new station concepts for weekly rotations
- Plan and execute themed station concepts for holidays and special events
- Serve as a resource and mentor to the St. Jude Culinary Apprentices
- Present food in accordance with established presentation standards
- Set up the station for meal periods based on anticipated volume
- Complete food requisitions to maintain appropriate inventory levels
- Maintain cleanliness and organization of all work areas
- Provide feedback to the Chefs and the Retail Team regarding daily operations
- Accommodate special requests based on customers' preferences
- Ensure quality and consistency across all menu items
- Provide instruction and delegate tasks to other cooks during production and events
- Support cooks in utilizing Computrition software for recipe and menu development
- Assist with event planning and preparation in collaboration with management staff
- Follow and monitor proper food handling, sanitation, safety, and storage procedures
- Maintain the cleanliness of coolers, freezers, storage areas, and workspaces
- Complete and assign cleaning tasks as necessary
- Record and maintain all required temperature logs
- Ensure compliance among cooks with all sanitation and safety standards
- Operate and maintain all kitchen equipment safely and properly
- Ensure the proper breakdown and storage of leftover items, as well as complete kitchen cleanup, at the end of the shift
- Respond appropriately in any hospital emergency or safety situation
- Immediately report and address any accidents, regardless of severity
- Adhere to all department, hospital, and culinary policies and procedures
- Attend and actively participate in all required meetings and training sessions
- Follow all payroll and uniform guidelines
- Perform additional duties as assigned or directed to meet departmental goals
- Maintain regular and predictable attendance
