Job Duties
- Plan or participate in planning menus and utilization of food surpluses and leftovers
- Estimate food consumption and purchase or requisition food items and kitchen supplies
- Purchase all food, some beverage, and kitchen supplies including cleaning and health materials
- Maintain potential food cost based on usage
- Review menus, analyze recipes, determine costs, and assign prices
- Prepare recipe cost cards and documented plate presentations
- Direct food apportionment policy to control costs
- Train service personnel in food and menu knowledge
- Supervise kitchen personnel and coordinate assignments for timely food production
- Observe methods of food preparation, portion sizes, and garnishing for quality assurance
- Test cooked foods for consistent quality
- Oversee shipping and receiving area and ensure product rotation and dating
- Devise special dishes and develop documented recipes
- Perform weekly self-inspections using city health inspection form
- Familiarize new personnel with kitchen standards
- Establish and enforce nutrition and sanitation standards
- Implement and maintain safe food handling policies and staff training
- Ensure food quality and variety in associate cafeteria
- Participate in the Manager on Duty program
