Job Qualifications

  • Culinary degree
  • Strong organizational, analytical, communication, and leadership skills
  • Bilingual English/Spanish verbal communication skills
  • Legally authorized to work in the United States without sponsorship
  • Ability to read and interpret loading instructions, diagrams, and food specifications
  • Proficiency in Microsoft Office
  • Ability to learn and master company systems and processes
  • Highly flexible and proactive team player
  • Excellent knowledge of food and hygiene standards
  • Valid Food Protection Manager Certificate recognized by local authorities
  • Strong knowledge of HACCP procedures
  • Meticulous time management skills
  • Experience in airline catering is a plus

Job Duties

  • Lead and manage kitchen staff including line cooks, prep cooks, and helpers
  • Ensure passion for gourmet food is reflected in all culinary creations
  • Understand and execute a variety of international cuisines
  • Comply with all food safety rules and regulations
  • Schedule team based on production volumes and labor budgets
  • Delegate tasks effectively to cooks and helpers
  • Requisition food and supplies needed for daily production
  • Prepare menu items according to production sheets and recipes
  • Control overproduction and minimize waste
  • Collaborate with cold kitchen teams to ensure complete production
  • Manage and complete food safety quality documentation in real time
  • Maintain waste logs for financial review
  • Follow batch recipes using appropriate tools
  • Develop and train team members to achieve high quality and productivity
  • Control labor and overtime costs
