Job Requirements
- Two plus years of post-high school education
- Five plus years of related experience in culinary management
- Hotel experience preferred
- Knowledge of food safety regulations and labor laws
- Strong leadership and communication skills
- Ability to work under pressure and meet deadlines
- Availability for regular attendance
Job Qualifications
- Two plus years of post-high school education, culinary education preferred
- Five plus years of employment in a related culinary or food service position
- Previous hotel experience preferred
- Advanced knowledge of principles and practices within the food profession, including management of associates and complex food and beverage operations
- Knowledge of hotel operations, marketing plans, security, personnel and labor relations, business plans, repairs, maintenance, budget forecasting, quality assurance, hospitality law, and long-range planning
- Strong leadership skills to motivate and develop staff and achieve goals
- Ability to work effectively under time constraints and deadlines
- Effective verbal and written communication skills with the ability to adapt to different audiences
Job Duties
- Manage the daily production, preparation, and presentation of all food for the hotel restaurant(s) and room service to ensure a quality, consistent product
- Manage human resources in kitchen production and preparation areas including interviewing, hiring, scheduling, training, developing, empowering, coaching, counselling, performance and salary reviews, and discipline
- Schedule and oversee maintenance and sanitation of kitchen, equipment, and related areas to ensure a healthy, safe work environment meeting all standards
- Monitor, analyze, and control labor and food costs
- prepare reports, charts, and schedules to ensure budgets are met while quality is maintained
- Promote the Accident Prevention Program to minimize liabilities and related expenses
- Assist the Executive Chef in creating, costing, and implementing seasonal and special menus
- Assume the responsibilities of the Executive Chef in their absence
- Comply with attendance rules and be regularly available to work
- Perform other job-related duties as assigned
