The role of the Sous Chef in San Jose, USA, is an on-site position offering a competitive salary range from $71,530.60 to $89,412.85 annually. This position is pivotal in maintaining the company’s high standards for food preparation and kitchen operations. The Sous Chef oversees the preparation of airline meals in strict accordance with company standards, menu specifications, and production schedules. Managing a team of over 20 kitchen production workers, the Sous Chef ensures that every meal prepared meets precise portion weights, seasoning, and plating specifications unique to customer requirements. In addition to supervising food preparation, the Sous Chef is responsible for ensuring compliance with safety, hygiene, and quality standards, including adherence to Hazard Analysis and Critical Control Point (HACCP) regulations. This includes monitoring material consumption, ordering food and equipment, and conducting quality control checks to maintain the highest standards. The role also involves stepping in for the Executive Chef during absences, thereby requiring a deep understanding of menu presentations and kitchen management. The Sous Chef participates actively in the development of new food products and menu updates, reflecting the evolving tastes and requirements of airline clients.
