Job Requirements
- High school diploma or equivalent
- Apprenticeship or certification from a recognized culinary institution
- Minimum three years of experience in commercial cooking
- Comprehensive understanding of HACCP and food hygiene regulations
- Ability to lead a kitchen team and manage operations
- Strong organizational and communication skills
- Willingness to work full-time on-site in Des Plaines, IL
- Proficiency with Microsoft Office and other computer applications
Job Qualifications
- Apprenticeship or certification from a culinary school
- Three to five years of experience in commercial cooking
- Knowledge of food and hygiene regulations including HACCP
- Demonstrated ability to maintain financial controls such as food cost budgeting and stock level management
- Strong communication and organizational skills
- Service-oriented mindset
- Leadership experience and skills
- Proficiency in Microsoft Office and Windows-based applications
Job Duties
- Execute and supervise food production activities such as cleaning, cutting, marinating, seasoning, cooking
- Assume responsibilities of Executive Chef when absent, including vacation and off-days coverage, menu presentation
- Supervise, coordinate, and control kitchen helpers in food storage maintaining tidiness and FIFO principle
- Conduct, coordinate, and supervise inventories
- Monitor material consumption and order required food and equipment daily to satisfy production plans
- Participate in food product and menu development for presentations
- Maintain and update content in catering manuals
- Execute countermeasures in production for customer complaints
- Support training of kitchen helpers
- Maintain and monitor hygiene, health, and safety standards adhering to HACCP regulations
- Conduct quality control checks including goods received and recipe compliance
- Organize, staff, and direct the kitchen area efficiently
- Motivate and develop subordinate employees within Human Resources policies
- Implement company values and management principles
- Control cost budget in the area of responsibility and initiate corrective actions
- Participate and support initiatives such as Global Quality Standard (GQS), HACCP, Lean Manufacturing
