The role of Executive Sous Chef at Legends is a pivotal position within the culinary team. Reporting directly to the Executive Chef, the Executive Sous Chef plays a significant role in supporting all culinary operations within the facility. This encompasses overseeing production, operations, and sanitation within both culinary and stewarding departments to ensure the highest standards of food quality, safety, and operational efficiency. The position involves a hands-on approach to managing food ordering, receiving, and preparation processes, maintaining budget and food cost goals, and ensuring all products are produced in accordance with Banquet Event Orders for a wide variety of events.
In addition to operational oversight, this role requires active engagement with the local hospitality community and professional associations, reflecting Legends' commitment to industry involvement and continuous improvement. Coordination with other departments is essential, necessitating attendance at event-related meetings and prompt communication of any changes that may impact service delivery. The Executive Sous Chef is also charged with maintaining kitchen equipment cleanliness and scheduling annual maintenance to ensure operational readiness.
Staff training is another critical function of this role, focusing on compliance with health department regulations and promoting food safety through 'Serve-Safe' certification standards. Maintaining a minimum Health Department score of 90 or higher is a key performance metric. Inventory control responsibilities, including assisting with monthly inventories, further underscore the financial stewardship expected in this position. The Executive Sous Chef is responsible for supervising the kitchen in the absence of the Executive Chef, reinforcing the importance of leadership capabilities within the team.
