Job Requirements
- Education and experience with at least 4 years of related progressive experience or culinary degree with at least 2 years of progressive experience in hotel or related field
- Must have knowledge of F&B preparation techniques, health department rules and regulations, liquor laws and regulations
- Long hours sometimes required
- Medium work exerting up to 50 pounds of force occasionally and/or 20 pounds of force frequently for lifting, carrying, pushing, or pulling
- Maintain a warm and friendly demeanor at all times
- Effective verbal and written communication with all levels of employees and guests
- Ability to listen, understand, and clarify concerns
- Ability to multitask and prioritize departmental functions
- Attend all required hotel meetings and trainings
- Participate in M.O.D. coverage as required
- Maintain regular attendance and comply with scheduling needs
- Maintain high standards of personal appearance and grooming
- Comply with Highgate standards and regulations to promote safe and efficient operations
- Identify problem areas and assist in implementing solutions
- Handle problems including anticipating, preventing, identifying, and solving issues
- Ability to understand and evaluate complex information
- Maintain confidentiality of information
- Perform other duties as requested by management.
Job Qualifications
- At least 4 years of related progressive experience or culinary graduate with at least 2 years of progressive experience in a hotel or related field
- Knowledge of F&B preparation techniques, health department rules and regulations, liquor laws and regulations
- Strong leadership and training skills
- Ability to manage food and labor costs
- Excellent communication and interpersonal skills
- Ability to multitask and prioritize departmental functions
- Knowledge of menu development and portion control
- Experience with food quality assessment and standards enforcement
- Proficient in preparing and submitting operational reports
- Skilled in problem solving and conflict resolution
- Familiarity with sanitation laws and safety standards.
Job Duties
- Work with other F&B managers and keep them informed of F&B issues as they arise
- Keep immediate supervisor fully informed of all problems or matters requiring his/her attention
- Coordinate and monitor all phases of Loss Prevention in kitchen areas
- Prepare and submit required reports in a timely manner
- Monitor quality of all food product and presentation
- Ensure preparation of required reports including wage progress, payroll, revenue, employee schedules, and quarterly action plans
- Oversee daily operations of kitchen and food production areas including hot and cold food preparation
- Make cooks aware of daily forecasts and customer counts
- Respond to guest complaints in a timely manner
- Ensure compliance with SOPs and requisition procedures
- Conduct staff performance reviews
- Implement and monitor corporate promotions
- Enforce local health department sanitation laws
- Compute daily food cost
- Work with Director of F&B to create and implement menus
- Assess food portion size, visual appeal, taste, and temperature
- Check stations for proper food storage and sanitation
- Oversee food purchases for quality and price
- Manage daily activities such as food preparation, sanitation, inventory receiving, logging reports, and food cost reporting
- Prepare daily food production sheets
- Cut meat, poultry, seafood according to daily needs.
