The Sommelier position at Rosewood Hotels & Resorts plays a critical role within the Food and Beverage department, directly supporting the Director of Wine in selecting, purchasing, storing, inventorying, and selling an exquisite range of wines. This role ensures that the wine list complements the A la carte menu by maintaining a balanced, varied, and plentiful selection to satisfy guests' diverse tastes and enhance their dining experience. A successful Sommelier upholds high standards of operational efficiency by engaging in thorough training programs, providing robust support to the outlet leaders, and fostering teamwork and feedback throughout the service team.

This position involves direct interaction with guests, offering expert wine recommendations, promoting beverage sales including digestives, and ensuring exceptional service quality that reflects the brand's promises and cultural values. The Sommelier must maintain a comprehensive understanding of state liquor laws and abide by them rigorously, ensuring responsible service at all times. Training duties include educating front-of-house associates on wine knowledge and pairing techniques, which is crucial for aligning the service standards with the exquisite offerings presented to guests.

Day-to-day responsibilities demand meticulous attention to wine stock control, inventory processes, and updating wine lists to keep the selection fresh and relevant. The Sommelier liaises with the Executive Chef and culinary team to ensure wine pairings align seamlessly with the evolving food menu. They also manage supplier relationships to keep the wine selection innovative and of the highest quality. In addition, this role requires the Sommelier to handle administrative tasks such as ensuring the POS system reflects accurate wine pricing and stock availability, as well as leading wine tastings and training sessions.

Job Requirements

  • must have diploma or equivalent combination of education and experience
  • valid Food Handler’s card and certifications required by the State of Texas
  • minimum age of 21 years to serve alcoholic beverages
  • preferably hold WSET certification or Court of Master Sommelier certification
  • must demonstrate attention to detail, accuracy and speed in job performance
  • ability to prioritize, organize and follow up on tasks

Job Qualifications

  • diploma or some college education or equivalent combination of education and work experience
  • current and valid Food Handler's card and other state-required certifications
  • minimum 21 years of age to serve alcoholic beverages
  • preferably WSET or Court of Master Sommeliers certifications
  • ability to perform job functions with attention to detail, speed and accuracy

  • ability to follow directions thoroughly

Job Duties

  • support the Director of Wine in selecting, buying, storing, selling, inventorying and serving wines
  • provide full operational support to outlet leaders
  • maintain efficiency during service through planning, preparation, and adapting to the needs of the moment
  • deliver brand promises and support Relationship Hospitality implementation
  • ensure high standards of personal presentation and grooming
  • comply with all departmental policies, service procedures and standards
  • maintain knowledge of VIP guests
  • recommend and sell wines and other beverages

  • perform monthly stock control and inventory
  • update wine and beverage lists
  • manage guest relations and handle complaints
  • make requisitions to maintain stock levels
  • maintain POS and manual systems knowledge
  • anticipate guest needs and provide prompt response
  • ensure cleanliness and organization of service areas
  • complete opening and closing procedures
  • manage wine stock levels and ordering
  • ensure wines are served at correct temperature and faultless condition
  • deliver consistent and efficient wine product training
  • curate hotel wine lists with guidance
  • manage beverage menu engineering and beverage costs
  • collaborate with culinary teams on wine pairing relevance
