Job Requirements

  • An OR food handlers card or equivalent
  • food protection manager certification with six months of hire
  • formal training through cooking school, professional culinary institute, or 2- or 4-year college degree program in hospitality or culinary arts and three years of working chef experience in a high volume environment
  • OR five years of working chef experience in a high volume environment
  • ability to work a variety of shifts including day and swing
  • ability to stand continuously for four hours and throughout eight-hour shift
  • ability to walk on hard surfaces
  • ability to carry up to 20lbs
  • lift up to 50lbs occasionally
  • push and pull carts weighing 100-150lbs
  • frequent bending using leg muscles
  • ability to reach and hand-eye coordination for use of knives and heated equipment
  • alertness to safety protocols

Job Qualifications

  • Formal training through cooking school, professional culinary institute, or 2- or 4-year college degree program in hospitality or culinary arts
  • three years working chef experience in a high volume environment or five years working chef experience in a high volume environment
  • OR food handlers card or equivalent
  • Food Protection Manager Certification within six months of hire
  • customer service class for patient care or equivalent
  • basic nutritional information class
  • sustainable information class
  • certificate of completion in culinary arts or foods and hospitality service from certified community college or technical school preferred
  • American Culinary Federation Certified Culinarian designation preferred
  • HACCP certification preferred
  • strong interpersonal, verbal, and written communication skills
  • proficiency in Microsoft Suite (Word, Excel, PowerPoint, Outlook, Publisher)
  • Oregon Q Care Course preferred

Job Duties

  • Coordinate all production activity for the third floor production needs
  • supervise production levels ensuring adequate food preparation while minimizing waste
  • oversee the production of retail menu items adhering strictly to recipes
  • supervise HACCP procedures ensuring food safety compliance and document corrective actions
  • assign cleaning schedules and record task completions
  • ensure the kitchen is properly cleaned and organized
  • provide production training for food service workers and cooks
  • distribute workload equally and adjust schedules
  • perform tasks assigned by Executive Chef or designee
  • assist with scheduling, staff training and sanitation
  • attend menu meetings and assist with safety team functions
  • schedule daily tasks for the production team
  • assist purchasing with online ordering
  • coordinate upcoming event planning with purchasing
  • review and maintain equipment maintenance logs
  • coordinate equipment repairs
  • participate in employee recognition programs
  • ensure compliance with staff roles and responsibilities
  • act as guest/customer advocate
  • resolve problems for positive outcomes
  • support team members and assist with production and special functions as needed
  • support sustainability efforts including recycling and FIFO product utilization
