The Prep Cook position at Cornbread is fundamental to the seamless functioning of the kitchen. This role is critical in ensuring all food products are prepared to the highest standards and all kitchen operations run smoothly. As a Prep Cook, you will manage the daily preparation of hot and cold ingredients, following strict guidelines and Standard Operating Procedures to ensure quality and consistency. This position requires proficiency in various cooking techniques, including stirring, straining, parboiling, and sauce reduction, alongside precise measurement of ingredients. Additionally, the Prep Cook takes responsibility for daily cleaning, maintenance, and organization within the kitchen, ensuring a safe and efficient workspace.

In this role, you will work closely with the Chef on Duty and kitchen management to uphold safety standards and minimize waste through proper product rotation, labeling, and dating. The position demands a proactive and team-oriented approach, with a focus on ownership and pride in your work. Opening and closing checklists must be thoroughly completed to maintain department standards while supporting the overall cleanliness and upkeep of the restaurant. The role also involves handling kitchen equipment safely, performing routine station set up and breakdown, and actively participating in staff training sessions to enhance skills and knowledge.

The Prep Cook must be detail-oriented, organized, and safety-minded, able to work efficiently under pressure while maintaining the highest standards. Job Requirements

  • High school diploma or equivalent
  • minimum 1 year of experience as a prep cook or related role
  • valid Food Handlers certificate or Serv Safe certification within 30 days of employment
  • ability to lift and carry 50+ pounds
  • capability to stand for extended periods
  • strong attention to detail and organizational skills
  • ability to work in fast-paced kitchen environment

Job Qualifications

  • Food service: 1 year as a prep cook or similar role
  • proficiency in technology, writing, reading
  • people skills: dealing with a team proactively, professionally, and positively

  • food handlers certificate within 30 days or Serv Safe equivalent
  • ability to lift 50+ lbs, operate carts, and hand trucks, and stand for long periods

  • able to work indoors and sometimes outdoors throughout the shift

Job Duties

  • Manage all types of food and food products to prepare and present for dining customers
  • follow all Cornbread Standard Operating Procedures to properly and efficiently prep and prepare all hot and cold food to the DOH and Cornbread's standards
  • perform basic cooking tasks such as stirring, straining, and parboiling food and reducing sauces
  • measure seasonings, condiments, and ingredients for use in cooking
  • complete shift work (opening and closing checklists) thoroughly per department standards
  • work as a team with the management staff by performing routine cleaning and basic upkeep of the front and the back of the house
  • perform general duties associated with setting up and breaking down stations throughout the kitchen and restaurant to start or close a shift as directed
  • rotate, label, and date all products to minimize waste and spoilage
  • inform the Chef on Duty of any sub-par product and safety issues as they arise
  • maintain all kitchen equipment in clean working order at all times and escalate any issues to leadership
  • practice safe and clean work habits to avoid injury to self and others
  • maintain complete knowledge of correct maintenance and use of equipment
  • use equipment and tools only as intended, properly and safely
  • update knowledge and skills by participating in staff training opportunities
