Job Requirements

  • High school diploma or GED unless waived by Human Resources
  • five years of work experience in kitchen management
  • ServSafe certification
  • ability to pass pre-employment drug/alcohol screen
  • background investigation
  • ability to obtain and maintain gaming license
  • physical ability to perform kitchen duties including lifting up to 50 pounds
  • availability to work nights, weekends, and holidays
  • ability to stand, walk, and work in noisy, hot environments
  • strong organizational skills
  • effective verbal and written English communication

Job Qualifications

  • High school diploma or GED
  • ServSafe certification
  • five years of kitchen management experience
  • associates degree in Culinary Arts or related field preferred
  • AFC certification preferred
  • knowledge of kitchen equipment operation

  • knowledge of budget and planning

Job Duties

  • Responsible for the functioning of all kitchen employees, facilities, and costs
  • contributes to maximizing overall Food and Beverage departmental profit
  • responsible for the production, preparation and presentation of all food items
  • establishes and maintains effective team member and interdepartmental relations
  • develops formal training plans and conducts on-the-job training sessions
  • determines and maintains food par stocks
  • ensures quality inspection of all perishable food items
  • attends and contributes to department meetings
  • maintains standard recipe files
  • determines production schedules and staffing requirements
  • hires, trains, and supervises kitchen staff
  • plans menus
  • schedules work of kitchen staff
  • conducts physical inventories and places orders
  • manages kitchen operations, revenue and assets
  • ensures safe, orderly, and sanitized kitchen
  • instructs employees on safety, health and sanitation
  • establishes controls to minimize food waste and theft
  • implements safety and training programs
  • develops and tests recipes
  • prepares budget data and monitors financial results
  • supervises cooking of skillful items
  • evaluates food quality
  • inspects supplies and work areas
  • instructs staff in food preparation
  • monitors sanitation practices
  • checks quantity and quality of received products
  • coaches and disciplines employees
