The Mavericks Performance & Training Center is the premier facility dedicated to serving the Dallas Mavericks NBA organization. It functions as the central hub for training, practice, performance, and hospitality operations. The Pastry Chef role is a key leadership position responsible for overseeing all aspects of pastry, dessert, bakery, and specialty confectionery production throughout the facility. This role demands a unique blend of creativity, technical skill, exceptional organizational ability, and operational discipline. The Pastry Chef will be instrumental in delivering outstanding desserts and baked goods that meet the high expectations of various hospitality operations including executive dining, VIP functions, player dining, and large special events.

The ideal candidate for this position is highly organized and technically proficient, with the ability to execute both large-scale production and refined plated dessert presentations with consistency and quality. Beyond production, this role offers the opportunity to innovate and develop new dessert offerings while maintaining operational efficiency and stringent quality standards.

Key responsibilities include managing pastry production workflows and schedules, maintaining inventory levels, minimizing waste, and ensuring that all pastry products meet portioning, freshness, and presentation standards. Collaboration plays an important role as this person will work alongside culinary leadership on menu development and seasonal programming, while also supporting VIP events, corporate functions, and player dining experiences.

Job Requirements

  • Minimum 5 years of pastry or bakery experience
  • Formal pastry training or equivalent professional experience
  • Strong knowledge of baking techniques, chocolate work, plated desserts, and production systems
  • Strong organizational and time management skills
  • Ability to execute under tight deadlines while maintaining quality standards

Job Qualifications

Job Duties

  • Execute and oversee production of desserts, pastries, breads, breakfast pastries, specialty baked goods, and seasonal offerings
  • Develop and maintain recipes, production standards, and presentation guidelines
