Job Duties
- Create and cost seasonal dessert, bread, and pastry menus across multiple restaurant concepts
- Oversee the daily output of the pastry department ensuring consistency in doughs, batters, and finishes
- Lead and train Pastry Cooks and Bakers fostering a culture of precision and artistic pride
- Manage specialized pastry inventory sourcing high-quality ingredients while hitting cost targets
- Maintain a 'no-waste' approach to production to optimize resources
- Collaborate with kitchen and management teams to ensure menu alignment and quality standards
- Innovate and experiment with new dessert creations reflecting the group's culinary voice
