Job Description

The Kitchen Manager role at Chateau Elan Winery & Resort is a pivotal leadership position responsible for overseeing all kitchen operations to ensure food quality, consistency, and safety in line with HEI franchise standards. This position involves managing the procurement, production, preparation, and presentation of all food served in the hotel’s restaurants and room service. The Kitchen Manager plays a critical role in maintaining a sanitary and safe work environment while achieving profitability through effective cost management. This role requires strong human resource management capabilities to recruit, train, schedule, and motivate kitchen staff, fostering a culture of excellence and safety.

As part of the leadership team, the Kitchen Manager collaborates closely with the Executive Chef to develop seasonal and special menus and assumes executive responsibilities in their absence. The successful candidate must demonstrate advanced knowledge of food service management, hotel operations, and labor relations and possess excellent communication skills to interact effectively with diverse stakeholders. Job Requirements

  • Post high school education, culinary education preferred
  • Five plus years of related work experience
  • Prior hotel experience preferred
  • Advanced knowledge of food and beverage management
  • Strong human resource management skills
  • Ability to manage budgets and control costs
  • Knowledge of health and safety regulations
  • Excellent communication and leadership abilities
  • Ability to work under pressure and meet deadlines

Job Qualifications

  • Two plus years of post high school education, culinary education is desirable
  • Five plus years of employment in a related position
  • Hotel experience preferred
  • Advanced knowledge of food profession principles and practices, including management of people and food and beverage operations
  • Knowledge of hotel operations including marketing plans, security, safety programs, personnel and labor relations, budget forecasting, quality assurance, hospitality law and long-range planning
  • Leadership skills to motivate and develop staff
  • Ability to work effectively under time constraints and deadlines
  • Effective verbal and written communication skills
  • Ability to adapt communication style

Job Duties

  • Manage the daily production, preparation and presentation of all food for the hotel's restaurants and room service
  • Manage Human Resources in the production and preparation areas of the kitchen to attract, retain and motivate associates while providing a safe work environment
  • Interview, hire, schedule, train, develop, empower, coach and counsel staff
  • Recommend and conduct performance and salary reviews
  • Schedule and manage the maintenance and sanitation of the kitchen and equipment to ensure a safe work environment
  • Monitor, analyze and control labor and food costs
  • Assist the Executive Chef in creation, costing and implementation of seasonal and special menus
  • Assume the responsibilities of the Executive Chef in their absence
  • Promote the Accident Prevention Program
  • Perform other job-related duties as assigned
