The Lead Baker role at San Manuel Casino plays a pivotal part in maintaining the high standards of the Pastry Department. Reporting under the direction of the Assistant Pastry Chef, the Lead Baker is entrusted with leading, supporting, and training the baking team.   • possesses a strong knowledge of fundamental and advanced baking techniques including bread, cakes, dessert pastries, cookies, mousses, and fine chocolate products
  • reviews and validates each Baker's production sheet for accuracy and alignment with daily production goals
  • conducts daily inventory of essential ingredients
  • trains bakery personnel and conducts daily pre-shift meetings
  • ensures proper food storage and compliance with rotation standards including FIFO method
  • upholds food safety protocols and sanitation
  • supports Pastry team for special events and catering
  • oversees dessert stations ensuring professional presentation
  • reports injuries, accidents, or unsafe conditions
  • maintains operational records including sanitation documentation, production sheets, and break schedules
  • performs other duties as assigned to support department operations
