Job Requirements

  • High school diploma or equivalent
  • A culinary degree or equivalent certification
  • Minimum 2 years of culinary experience in hotels or similar environments
  • Experience in supervisory roles preferred
  • Knowledge of culinary techniques and safety standards
  • Strong communication and leadership skills
  • Ability to stand for extended periods and perform physically demanding tasks
  • Flexibility to work varying shifts including evenings, weekends, and holidays
  • Commitment to uphold health and safety regulations
  • Ability to handle multiple tasks efficiently under pressure

Job Qualifications

  • A culinary degree
  • At least 2 years of progressive experience in a hotel or related field
  • Previous supervisory experience preferred
  • Knowledge of food and beverage preparation techniques
  • Understanding of health department rules and regulations
  • Familiarity with liquor laws and regulations
  • Ability to work long hours when required
  • Capability to perform medium work involving exertion of up to 50 pounds occasionally and 20 pounds frequently or constantly

Job Duties

  • Assist Chef de Cuisine in recruiting and retaining a service team passionate about their craft and committed to exceeding guest expectations
  • Assist Chef de Cuisine with completion of accurate inventory and month-end processes including POs, invoicing, accruals, and reclassifications
  • Ensure maintenance of 100% culinary equipment functionality
  • Assign and ensure completion of weekly cleaning projects
  • Lead and guide associates by exemplifying company culture and standards
  • Ensure daily Pre-Shift meetings and Shift reports occur
  • Provide operational support in all needed areas
  • Deliver hands-on training and development
  • Handle guest issues and communicate with culinary leadership
  • Review shift reports and proactively address concerns or issues
  • Prepare ingredients using various cutting techniques
  • Recognize quality standards in fresh produce, fish, dairy, and meat
  • Accurately cook meats, fish, vegetables, soups, and other hot food products
  • Cook food using various utensils or grillers such as stir frying, grilling, roasting, baking, sautéing, poaching, and simmering
  • Follow recipes and plating guides for consistent products
  • Ensure food quality, simultaneous service, and timely delivery
  • Maintain a sanitized and orderly kitchen environment
  • Oversee food storage and rotation according to procedures
  • Break down kitchen line, store food, and clean and sanitize equipment properly after meal periods
  • Practice safe work habits to prevent injury
  • Comply with all health department and company food safety regulations
  • Perform other reasonable job duties as directed by supervisor
