Job Requirements
- 2 years of work experience as a sushi chef, preferably in a high-volume Japanese restaurant
- Good knowledge of various sushi types and sushi-rolling techniques
- Ability to work both fast and accurately
- Team spirit and coaching abilities
- Availability to work during business hours, including holidays, weekends and evenings
- Flexibility to take on various shifts
- Physical ability to lift and move up to 10 pounds frequently, up to 25 pounds regularly and up to 50 pounds occasionally
- Capability to safely use kitchen tools, equipment and cleaning chemicals
- Ability to stand and walk for entire shifts including navigating stairs and slick surfaces
- Capacity to work in hot and cold environments
- Dedication and passion for culinary excellence
- Willingness to be a team player
Job Qualifications
- Minimum of 2 years work experience as a sushi chef, preferably in a high-volume Japanese restaurant
- Good knowledge of various sushi types and sushi-rolling techniques
- Strong teamwork and coaching abilities
- Ability to work fast and accurately under pressure
- Excellent communication skills
- Capability to develop unique plating designs
- Knowledge of inventory management and food cost control
- Understanding of health and safety standards
- Ability to adapt to flexible schedules
- Familiarity with back-of-house kitchen systems and procedures
- Basic understanding of Purchase and Loss Statements
- Culinary passion and dedication to craft
Job Duties
- Create and manage the sushi menu with various main ingredients and raw fish
- Prepare all types of sushi, including maki, nigiri and sashimi
- Report directly to the Chef de Cuisine
- Assist in ordering all products based on par systems and inventory management
- Oversee all ordering and inventory to ensure low food costs
- Assist in the management including recruiting, hiring, scheduling, reviewing and terminating
- Manage staff schedules and ensure cuts are being made whenever possible
- Maintain open lines of communication with all management and upper management to address any issues or concerns
- Participate in manager meetings to address issues
- Oversee quality control of all food production and execution
- Develop unique and visually appealing plating designs for new dishes
- Create new menu items upon guest requests and seasonally
- Record the recipes of new menu items for consistent replication
- Ensure all health and safety standards are upheld by enforcing high sanitation standards
- Address all kitchen-related problems and incidences in a timely and effective manner
- Perform daily maintenance and follow-through of back-of-house systems including AM walkthrough, temperature logs, line checks, prep lists, order guides
- Complete and maintain inventories with purchaser
- Understand and monitor the Purchase and Loss Statement monthly
- Collaborate on research and development process with the Executive Chef to refine menu dishes
