The Role: We are seeking a creative and experienced Pastry Chef to lead our pastry department, develop innovative dessert menus, and maintain the highest standards in both presentation and quality. The ideal candidate will have strong leadership capabilities, a passion for the pastry arts, and a proven track record in upscale or high-volume kitchens. As Pastry Chef at Sexy Fish Miami, you will play a pivotal role in shaping the sweet side of our culinary offerings, crafting unique desserts that complement our bold, contemporary menu. You will lead and mentor a dedicated pastry team to consistently deliver high-quality, visually stunning desserts that exceed our guests' expectations. Job Requirements

  • ability to grasp, lift, move, or push goods on cart/truck weighing up to 25 pounds
  • ability to move safely in uneven terrain or in confined spaces
  • remain in stationary position for 8 or more hours throughout work shift
  • ability to tolerate varying conditions of noise level, temperature, illumination, and air quality
  • requires manual dexterity to use and operate all necessary equipment

Job Qualifications

  • 5+ years in pastry roles, including team leadership
  • exceptional creativity and attention to detail
  • proven ability to develop innovative and seasonal dessert menus
  • strong knowledge of pastry techniques, food safety, and kitchen hygiene standards
  • experience in upscale or high-volume kitchen environments
  • excellent communication and interpersonal skills
  • ability to train and mentor culinary staff

Job Duties

  • Maintain a seasonal pastry menu reflecting Sexy Fish Miami's culinary philosophy with fresh, high-quality ingredients
  • supervise and mentor the pastry team to ensure consistency and adherence to culinary standards
  • collaborate with management to achieve culinary objectives, including revenue targets and guest satisfaction
  • manage pastry inventory, control food costs, and optimize profitability through effective planning and waste reduction
  • reconcile stock and generate gross profit (GP)
  • facilitate communication between the kitchen and wait staff
  • ensure proper food preparation and oversee kitchen cleanliness and hygiene
  • order supplies as needed and ensure compliance with food cost guidelines
  • brief and motivate staff on daily responsibilities and monitor performance
  • lead the team to maintain high standards of food preparation and presentation
  • report any issues to the Head Chef and keep staff informed of menu changes
  • train new employees and ensure adequate staffing in the kitchen
  • ensure all food meets quality standards and is properly plated
  • maintain quality control in food preparation
  • complete additional duties as assigned by management
