Job Requirements

  • High school diploma or equivalent
  • Three years recent experience in dining services production
  • One year experience dining management
  • Prior experience working in or supervising a commercial kitchen
  • Formal culinary training
  • Knowledge of sanitary food handling and food safety regulations
  • Strong leadership and communication skills
  • Ability to work collaboratively and maintain positive relationships with residents and team members

Job Qualifications

  • Three years recent experience in dining services production
  • One year experience dining management
  • High school diploma or equivalent
  • Prior experience working in or supervising a commercial kitchen
  • Formal culinary training
  • Demonstrated technical skills in food production, standardized recipes, and sanitary food handling
  • Working knowledge of applicable federal, state and local regulations
  • Ability to instruct, direct and lead staff
  • Excellent interpersonal skills to relate well to employees, residents and visitors

Job Duties

  • Supervises all aspects of food production including menu planning and food preparation to ensure customer satisfaction
  • Responsible for the completion of all required record keeping related to these processes
  • Ensures proper food handling procedures when preparing, holding, serving and storing of raw and cooked food items
  • Advises the Director of Culinary Services in the preparation of the department schedules within budgetary guidelines, providing adequate staff to assure quality-dining services
  • Assists the Director and Assistant Director of Culinary services with agenda items for staff meetings related to planning, coordinating and implementing policies and procedures regarding quality resident dining services
  • Assists in the daily operation of dining services department
  • Responsible for the overall production and quality standards of community meals
  • Creates daily menu specials
  • Ensures compliance with recipes during food preparation and maintains recipe files
  • Responsible for catering and special functions food production
  • Participates in the development of the annual dining services budget as necessary
  • Assists with inventory control of necessary food and supply items
  • Assists with routine maintenance of dining services equipment
  • Responsible for safety of kitchen work area
  • Participates in the dining services Quality Assurance Program
  • Maintains customer service with residents
  • Ensures comment cards are accessible at all meals and addresses questions or concerns
  • Assists Director of Dining Services with maintenance of policies, procedures, objectives and standards of practice
  • Ensures maintenance of a clean and sanitary work area through daily inspections of kitchen, dining room and pantry areas.
