The culinary department at the Pueblo of Sandia plays a vital role in delivering exceptional guest experiences through high-quality food preparation, careful adherence to food safety standards, and a collaborative team approach. The Lead Culinary Supervisor position is a pivotal role within this department, tasked with leading and managing culinary operations across various food venues under limited supervision. The Lead Culinary Supervisor assists senior chefs with training and scheduling kitchen staff, oversees food preparation to meet established standards, and ensures kitchen operations run smoothly and efficiently.
In addition to culinary skills, the role requires proficiency in managing personnel, maintaining kitchen sanitation, handling equipment maintenance issues, and addressing customer concerns promptly and professionally. The Lead Culinary Supervisor must maintain high standards of personal hygiene and kitchen cleanliness, monitor food temperatures, minimize waste by preventing overproduction, and ensure compliance with local, state, federal, and tribal sanitary regulations.
This role is dynamic and fast-paced, requiring flexibility to adapt to changing priorities and diverse clientele, including banquet events with complex menu requirements. Strong communication skills, both verbal and written, are essential for coordinating with kitchen and service staff to provide seamless banquet services. The position requires physical stamina and the ability to perform various physical activities, including lifting up to 50 pounds, standing for long periods, bending, twisting, and other movements necessary for food preparation and kitchen management. Work conditions include indoor and outdoor environments, exposure to varying temperatures, and the possibility of working flexible schedules, including weekends, holidays, and overtime.

Job Requirements
- High school diploma, GED certification, or equivalent
- Two years food preparation experience in a restaurant or food service capacity including one year of supervisory experience
- Must successfully complete the New Mexico Food Handlers course
- Must pass a stringent background investigation
- Will require pre-employment and random drug screening
- Ability to work indoors and outdoors including extreme temperatures and inclement weather
- Must be able to work a flexible schedule including weekends and holidays
- Work hours subject to change with overtime
- Ability to lift 50 pounds
- Must maintain punctual and regular attendance
- Adherence to the attendance policy of the Pueblo of Sandia
Job Qualifications
- High school diploma or GED certification
- Minimum two years food preparation experience in restaurant or food service
- At least one year of supervisory experience
- Knowledge of culinary techniques and food preparation methods
- Skills in menu development for diverse dietary preferences
- Strong leadership and team motivation abilities
- Excellent organizational and communication skills
- Ability to supervise and direct kitchen staff
- Knowledge of food safety and sanitation regulations
- Familiarity with buffet line operations
- Ability to write standard reports and documents
- Knowledge of Casino purchasing requirements and regulations desirable

Job Duties
- Assist the Sous Chef/Banquet Chef with training line cooks
- Prepare weekly work schedules and daily break schedules for pantry staff
- Ensure kitchen recipes are followed and maintain storeroom par levels
- Assure kitchen staff works in a sanitary, safe, and productive manner
- Monitor food preparation standards for quality, taste, and presentation
- Ensure cooperation between kitchen and service staff for optimal guest service
- Maintain clean and orderly kitchen workstations and storage areas
- Advise on equipment repairs and ensure timely maintenance
- Monitor and log temperature requirements for food safety
- Enforce personal sanitation standards among staff
- Investigate and resolve guest complaints about food quality/service
- Open and close the kitchen as necessary
- Ensure proper handling and preparation temperatures for food products
- Ensure safety gloves are worn when appropriate
- Control food production quantity to minimize waste
- Perform additional duties as assigned
- Maintain punctual and regular attendance according to schedule
- Build professional relationships with team members
- Support a collaborative work environment with mutual respect, honesty, and integrity
