We are currently seeking an Executive Pastry Chef to join The Metropolitan Club’s culinary team, led by Executive Chef Vincent Horville. This career-defining role requires an accomplished pastry professional who is passionate about the craft of baking and pastry arts and is dedicated to upholding the Club’s traditions of quality and service. The Executive Pastry Chef will play a critical role in creating and delivering outstanding pastry and dessert experiences for the Club’s discerning members. This position emphasizes the importance of scratch production, blending timeless recipes with contemporary culinary trends. The successful candidate will be responsible for overseeing all pastry and bake shop operations, maintaining the highest standards for products ranging from simple fresh rolls to elaborate wedding cakes.

Job Requirements
- college degree or culinary certification preferred
- minimum of 5 years experience as a pastry chef including leadership roles
- proven ability in volume banquet production and a la carte dessert service
- strong organizational and leadership skills
- ability to accept and work with constructive criticism
- ability to work collaboratively with team members
- flexible schedule to accommodate peak dining and event times
Job Qualifications
- experience in pastry production and bake shop management
- knowledge of scratch baking and contemporary plated desserts
- skilled in wedding cakes, breads, cookies, and petit fours
- ability to build and lead a cohesive pastry team
- modern approach to team building and menu planning
- effective communication skills
- prior private club or luxury multi-unit operation experience
- long tenure in previous pastry roles preferred
Job Duties
- plan staffing and execution of all pastry and bake shop items
- check daily functions ensuring all items are ordered and produced on schedule
- fashion table and pastry decorations from sugar paste and icings
- work closely and communicate with Executive Chef
- attend committee meetings as directed
- develop and produce daily and weekly dessert features and custom designs for private events
- be visible at peak periods in dining room and events
