Job Requirements
- Must be willing and able to take part in culinary events and competitions
- Ability to work from a standing position for extended periods
- Ability to perform reaching, stooping, and crouching motions repeatedly
- Dexterity in hands and fingers to manipulate food preparation tools
- Visual ability including closeness and depth perception for quality and safety
- Sense of smell and taste essential for food quality
- Closed toe, non-canvas, and non-skid shoes required
Job Qualifications
- Proven record of culinary accomplishments with personal recognitions
- Basic reading, writing, mathematical, and computer skills
- Minimum five years high-volume cooking experience with extensive fine dining knowledge
- Minimum three years experience as an Executive Chef in a hotel or fine dining restaurant
- Strong interpersonal, verbal, and written communication skills for culinary training
- Leadership, training, and motivational skills for staff
- Even-tempered with a reputation for consistency and fairness
- Organizational skills with ability to meet deadlines
- Good judgement of people and situations
- Ability to handle multiple details and high volume of events
- Neat, well-groomed, and highly professional
- Exceptional guest and customer service skills
Job Duties
- Review and approve recipe files and discuss improvements with culinary staff
- Use high quality food items prepared creatively, presented well, and flavorful
- Review and approve food orders from the commissary for special items
- Frequently review finished products for quality before leaving the kitchen
- Oversee kitchen appearance, cleanliness, and safety
- Ensure proper maintenance and functioning of kitchen equipment per health standards
- Troubleshoot unusual situations in the kitchen
- Dispose of kitchen waste properly
- Oversee menu creation, production, and ordering for special events
- Price menu, catering, and seasonal items adhering to cost control guidelines
- Develop seasonal specials and approve menu and pastry items
- Schedule and conduct product taste panels with management
- Participate in culinary events and competitions
- Monitor food costs and budgets weekly by managing purchasing, storage, and waste control
- Discuss daily food cost reports with kitchen and F&B staff
- Ensure invoices are coded and prices updated weekly
- Manage kitchen payroll with business forecasts and budget
- Interview, hire, and adjust kitchen staff as needed
- Review weekly schedules to meet forecasts and budgets
- Train, develop, and motivate culinary staff to exceed food preparation standards
- Provide positive leadership, counseling, and professional management
- Delegate responsibility to supervisors and subordinates to meet goals
- Display loyalty, dedication, and cooperation as part of the management team
- Maintain grooming standards and wear provided uniform
