Job Requirements
- High school diploma or equivalent
- Minimum seven years experience as an executive chef in a high-volume food service environment
- Experience in banquet and fine dining settings
- Strong leadership and team management skills
- Proficiency in menu development and kitchen sanitation
- Ability to work flexible hours including nights, weekends, and holidays
- Capability to manage budgeting and P&L responsibilities
- Effective communication skills in English
- Physical ability to perform duties in confined spaces
- Commitment to maintaining high standards of food quality and cleanliness
Job Qualifications
- Thorough knowledge of hot, cold food and pastry preparation
- Extensive skill in usage of slicers, mixers, grinders, and food processors
- Basic mathematical skills for understanding recipes and portion sizes
- Ability to read, write, and understand English
- Ability to work in confined spaces
- Minimum seven years experience as an executive chef in high-volume food industry
- Flexibility to work extended hours including nights, weekends and holidays
- Ability to work effectively in a team environment
- Experience in high-volume banquet and fine dining
- Excellent leadership and team development skills
- Experience with profit and loss and budgeting processes
- Proven track record of improving kitchen efficiency, quality, and cost control
- Experience with menu development
- Knowledge of kitchen sanitation and equipment operation and maintenance
Job Duties
- Manage and oversee all production, operation, and sanitation aspects of culinary and stewarding operations throughout the property
- Oversee culinary employees to achieve budgetary, food quality, and customer service goals
- Create and develop recipes and dishes tailored to property standards
- Manage hiring, scheduling, training, mentoring, and disciplinary actions for culinary staff
- Make effective use of available resources including time, labor, and materials to maximize productivity
- Assist in completion of staffing schedules based on forecasting
- Conduct regular quality assurance and quality control inspections to maintain cleanliness and proper functioning of kitchen equipment
- Maintain food, labor, and other expenses within budget
- Communicate and work closely with the General Manager
- Ensure consistent high level of food quality, kitchen productivity, and supply management
- Encourage cleanliness and cross-training within the culinary team
- Demonstrate knowledge of proper storage and handling of perishables
- Perform other duties as assigned
