Job Requirements
- Minimum of three to five years of culinary/kitchen management experience
- hands-on chef experience
- knowledge of federal, state, and local health regulations
- ability to manage inventory and budget
- strong leadership and communication skills
- proficiency in Microsoft Office and computer applications
- ServSafe certification preferred
- ability to maintain a safe and sanitary kitchen environment
- willingness to participate in staff development and training
- capability to adhere to company policies and safety procedures
Job Qualifications
- B.S. degree in culinary arts, food services technology/management, or related field
- or A.O.S. degree in culinary arts or culinary certificate and required experience
- minimum of three to five years of dynamic culinary/kitchen management experience, depending upon formal degree or training
- extensive catering experience a plus
- high volume, sophisticated foodservice operations experience highly desirable
- institutional and batch cooking experiences
- hands-on chef experience a must
- extensive knowledge of food and catering trends focusing on quality, production, sanitation, food cost controls, and presentation
- experience with Microsoft Office (Word, Excel and PowerPoint), Outlook, E-mail and the Internet
- willingness to participate in patient satisfaction programs/activities
- ServSafe certified highly desirable
Job Duties
- Designs regular and modified menus in line with standard procedures
- follows standardized recipes, portioning and presentation standards
- completes and applies daily production worksheets and waste log sheets
- tastes completed meals to ensure quality
- trains kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation based on company and regulatory standards
- establishes and maintains cleaning and maintenance schedules for equipment, storage and work areas
- ensures that kitchen staff follows and completes schedules as assigned
- leads inventory of food and non-food supplies to ensure availability of vital products at all times
- makes all decisions regarding utilization of leftover food products staying within company guidelines
- stays in sync with federal, state and local health and sanitation regulations and department sanitation procedures
- follows facility, department, and company safety policies and procedures
- participates and attends departmental meetings, staff development, and professional programs
