Job Requirements
- High school diploma or equivalent
- culinary degree preferred
- experience in restaurant and hotel kitchen operations
- knowledge of food safety and sanitation standards
- strong leadership and communication skills
- ability to manage kitchen staff effectively
- experience in menu planning and food cost control
- familiarity with purchasing and inventory management
- ability to maintain quality and consistency under pressure
- knowledge of governmental regulations related to kitchen operations
- basic financial management skills including budgeting and forecasting
- strong organizational skills
- conflict resolution skills
- ability to work collaboratively with other departments
Job Qualifications
- High school diploma or equivalent
- associate degree recommended
- culinary degree preferred
- understanding of restaurant, room service, bar/lounge, and banquet department procedures
- knowledge of basic sanitation and food safety standards

- strong customer and associate relation skills
- knowledge of overall hotel operations related to the kitchen
- ability to manage labor productivity
- good presentation and plating skills
- excellent communication skills
- strong organization skills
- effective conflict and change management skills
- good training and facilitation skills
- knowledge of purchasing, inventory controls, supplies and equipment
- knowledge of governmental regulations and safety standards including OSHA, EPA, ADA, CFC, NFPA
- experience with financial management including P&L statements, budgeting, forecasting, and scheduling
Job Duties
- Plan and direct food preparation and culinary activities
- modify menus or create new ones that meet quality standards
- estimate food requirements and food and labor costs
- ensure all supplies are ordered, stocked, and properly stored
- hire and fire kitchen staff
- assign duties to staff including food preparation tasks and line positions
- arrange equipment purchases and repairs
- maintain a strong, visible, and respectful presence with guests
- communicate service expectations and motivate staff
- develop innovative promotional strategies for incremental revenue
- respond to guest requests and strive to accommodate them creatively
- collaborate with departments to provide an outstanding food and beverage experience
- research new products and analyze cost and profit benefits
- review new food preparation and presentation techniques
- uphold quality and urgency with integrity
- provide vision, leadership, and strategy to inspire staff and drive financial success
